Pioneer Woman’s Bread Pudding

Today I tried this bread pudding: http://thepioneerwoman.com/cooking/2007/06/bread_pudding_f/ using 3/4 of a baguette, and vanilla ice cream instead of her sauce. Oh also, I skipped the nutty topping. Here’s what I would do next time, because it came out too sweet and too vanilla-y:

3-6 cups cubed stale bread (I cut up 3/4 of a sourdough baguette left out for a day or two in its paper wrapping)

1 tbsp vanilla

1/2 c white sugar

1/2 c light brown sugar

2 c milk

2 tbsp melted butter

2 eggs

Directions: preheat oven to 325 spread cubed bread over the bottom of a baking dish, beat eggs into a bowl, pour in butter, milk, vanilla, sugars and stir well. (I might heat it to melt sugars into the mixture next time, they did not combine well with stirring). Anyways, then pour the mixture over the bread, and put in hot oven 55-70 min. Remove when it is golden brown on the top.
