Cheater’s Lentil Soup with Ground Beef


So why is this lentil soup for “cheaters”? Because you don’t have to use soup made from scratch! If you want to, by all means, go ahead, but here in North Jersey it is summer time and I wasn’t about to stand over a hot stove for hours while simultaneously watching my 2 month old daughter. So if you are looking for quick dinner cheats, here’s a great one.

Ingredients: Lentil soup pack, Ground beef, salt/pepper, olive oil


Directions: Cook ground beef in a bit of olive oil in a pot that you’re going to make the soup in. That requires spending a little extra time, stirring, and coaxing to get it to nicely brown, but it means that you don’t have to wash two pots. Once the beef is browned, transfer it to a bowl and boil the water for the soup. DO NOT WASH THE POT IN BETWEEN! Once you have your mucky soup water boiling, add the soup pack and cook halfway, then add the ground beef and continue to cook until it is ready. Voila, cheater’s soup. Takes about 20 min.
