Hummus Appetizer with Roasted Red Peppers and Tomato

So this is an easy appetizer to make, and delicious too! It is also vegan, if you are interested in that, or if you have vegan friends and are entertaining. My neighbor and I made our own hummus and roasted red peppers for this one, but you can just as easily use store bought. Here is the end result:


Ingredients: tomatoes, red peppers, hummus, some kind of bread/pita/toast

Directions: Turn oven on to broil and while it is heating up halve and core your peppers. (Cut them in half and take the seed cores out) Put them on a baking sheet and roast until the outside just starts to char and they are soft when you poke them (be careful, hot!) Take them out of the oven and let them cool, remove their skins when they are cool enough to touch. Cut up the peppers into slices, and assemble your appetizer however you’d like. I spread hummus on sourdough bread and put the peppers on top, then added cherry tomato halves. Here is my (tiny) workstation:


Alternately you could (especially if you make your own) put some of the red peppers into the food processor and grind them up into the hummus. Be careful though, the peppers can be very sweet so don’t add too much. Let me know what variations on this you try, would love to hear!
